After the grapes are harvested and brought into the cellar, they are gently destemmed and then pressed. The grapes are dried out by the time they are hand-harvested, similar to a raisin which brings sweetness to the wine. The sweetness is balanced out by the right amount of Chenin to create the perfect balance between the two cultivars.
Tank fermentation takes up to 2 weeks at a temperature of 13⁰C. At a specific point and taste, our winemaker will stop the fermentation process to create this succulent, naturally sweet wine.
