An 16 year old shiraz vineyard on a slight southern slope on a very high potential red karoo soil with layers of clay and lime.
Grapes were harvested at 21 Balling sugar. Skin contact was given in the drainers for 2 hours to extract color before only the free run juice was drained of the skins and settled before fermentation. Two tanks we inoculated. After ferment the wine was racked, blended, filtered and bottled.
