The 13- to 17-year-old, trellised vines received supplementary irrigation to produce 10-14 tons per hectare and were grown in a Mediterranean climate, with the temperatures lowered by the cooling effect of winds and sea breezes.
Grapes were harvested in the early morning, gently crushed and lightly pressed at the cellar, where skin contact was allowed to create the perfect colour. Only the free-run juice was drained off to settle overnight. Fermentation took place in stainless-steel tanks under controlled temperatures between 12º and 14°C.
